Project Overview:

Sticks'n'Sushi Victoria is the latest restaurant to open in the chain's ever-expanding UK portfolio. The stylish restaurant is situated in the brand new Nova complex and is found only a stones’ throw away from our latest Ole & Steen venue.

The project management of this project was key to its success. Due to delivery constraints in the new central London development, our specialist Account Manager had to be proficient in the use of consolidated deliveries, while keen site supervision was an ongoing requirement throughout the project to ensure all fabrication fit perfectly into the spaces allotted.

Sticks'n'Sushi projects always require a variety of exciting equipment (including lava stone-fired Yakatori grills, high-end rice cookers, walk-in chillers and specialised sushi cabinets), however the small size of the Nova unit meant efficient use of the space was key to the effective operation of the commercial kitchen. By splitting the kitchen into zones and supplying smart storage, we eliminated excess equipment and shortened the distance between prep areas and their food's relative storage and cook areas. In doing this, we didn't just optimise the kitchen to the user's needs but also walkways and layout, allowing the staff to move more freely in the busy kitchen when necessary.

Although compact, this site proves to be one of the chain's most popular restaurants by regularly filling the 120 seats.
